• Quercetin is an organic compound belonging to flavonols – a subgroup of flavonoids naturally found in fruits, vegetables, and . It can be found in onions, apples, capers, broccoli, and green tea, among others. In dietary supplements, quercetin is found in its purified form – most often obtained from the Japanese pagoda tree ( Sophora japonica ). Its chemical structure is well-studied, stable, and resistant to high temperatures.
