Greta Garbo Keto Cake Recipe – keto sheets with walnut, jam and chocolate

Sheet ingredients:
150g Universal KetoMix
50g sweetener
4 eggs
7g ammonium bicarbonate
250g butter 82%
vanilla/lemon/rum essence

Filling:
400g hardened pumpkin
100g dark chocolate 85%
150g sugar-free strawberry jam
100g walnut

Method of preparation:
Melt the butter, put it in the food processor together with the eggs, sweetener and flavorings. Add the bicarbonate and ketomix gradually and let the robot knead the dough for about 1 minute. Divide the keto cake dough into 4 equal balls, which we spread between thin baking sheets, about 1-2 mm thick. Bake the sheets for about 12 minutes at 180 degrees.
While the Greta Garbo keto cookie sheets are cooling, toast 100 grams of walnuts and grind coarsely. Place the first sheet on the work surface, spread with hardened pumpkin, sprinkle with walnuts and place the second sheet on top. This is spread with sugar-free strawberry jam and also sprinkled with walnuts. Place the third sheet greased with hardened pumpkin, put the rest of the walnut and put the final sheet.
In a double-bottomed kettle, melt the chocolate with 50 ml of water. Optionally, sweetener can also be added. Spread the melted chocolate on the last sheet and leave the cake at room temperature until the glaze stabilizes.
