Another important condition for giving a product the name manuka honey is its origin. Each MGO manuka honey is produced only in certain indigenous areas of the New Zealand islands: simply where the rather rare manuka bushes (systematic name Leptospermum scoparium) grow.
Manuka is an evergreen shrub reaching 2 to 5 meters in height. It has dense branches and small, pointed leaves, and its beautiful, five-petalled, white flowers are especially attractive to bees, who eagerly gather their precious nectar. Manuka honey must be produced mostly from the pollen of this exotic plant.
Manuka MGO honey is distinguished from other honeys, for example produced in Europe or from other plants, by several other characteristics: an unusual taste, described as mineral and slightly bitter, as well as a strong smell, reminiscent of heather and wet earth.

The study, published in New Zealand in July 2014, prepared by a team of experts associated with the working group to define qualification criteria for manuka honey, based on a year's work, precisely defines when a product is manuka honey and when it is not deserve. this name. - is homogenous honey, produced in New Zealand, during the period when the manuka bushes are in bloom,
- was created largely from the nectar of plants of the species Leptospermum scoparium (manuka bush),
- has a specific conductivity range specified in the study: 347-867 μS/cm,
- has a characteristic taste: specific, mineral and slightly bitter,
- has a characteristic smell: specific, intense, earthy and warm,
- contains manuka bush pollen and other ingredients mentioned in the study, including, of course, methylglyoxal (MGO) and dihydroxyacetone (DHA).
