It has different properties from wheat flour when baking, this is explained by the fact that the gluten molecules, due to the presence of pentosan, do not produce the sticky effect like wheat flour to retain the gases in the dough. But due to the presence of mucilaginous substances in rye, an aromatic brown crust is produced by baking, rye bread being denser compared to wheat bread.
Method of preparation :
As an addition to sauces, soups, soups, dishes, dessert creams, improving their taste and nutritional value.
Rye with sesame and greens
Ingredients: 100g rye flour, 300ml water, sesame paste, greens (according to preference)
Put the rye flour in hot water with salt and mix continuously until a consistent paste is obtained. Add sesame paste and finely chopped greens. It is consumed cold.
Cream of rye
Ingredients: 150g rye flour, 200ml water, butter, honey
Boil the water and pour it over the rye flour, stirring continuously until it becomes a homogeneous mixture, everything on low heat. After 15 minutes, remove from heat, add butter and honey. It is served warm.
Wholemeal rye bread
Ingredients: 250g rye flour, 500g whole wheat flour, 2 tablespoons salt, 25g yeast, 450ml warm water, 2 tablespoons oil, milk, cumin.
It is prepared similarly to wheat flour bread.
